Guest Post: Insomnia Daughter's No Mixer Cookies

 I am one of those people who has chronic insomnia. Yes I have medication I can take but I often try not to because in the morning when I have to wake up for the slog of online classes that incapsulate my existence, it is very hard to wake up. I will also end up taking a long nap in between my classes which makes the problem worse. Because of this more often then not I end up laying in my bed staring up at the ceiling and waiting until the blessed moment when I can fall asleep. 

Unfortunately there are some nights when I can tell its just not gonna happen. Maybe I have too much energy, maybe I am stressed, maybe its just random but Tuesday night was one of those days. At about midnight I got up after trying to fall asleep for an hour and a half and cleaned the entirety of the kitchen I share with 3 other people. One am rolls around and despite scrubbing the counters and sweeping and doing dishes, I still have too much energy. 

Luckily I had planned for this moment earlier in the day and had put some butter in the fridge to soften from the freezer. I grabbed that and made these chocolate chip cookies by Bon Appetite

The nice thing about these cookies is that they do not require a mixer and come together pretty quickly! I had them ready by 2 am and one of my night owl roommates was awake. I will include pictures one taken by me and one taken by him. 


No Mixer Chocolate Chip Cookies

1 1/2 cup all purpose flour. 

1 1/4 teaspoon salt

3/4 teaspoon baking soda. 

1 1/2 sticks of butter (3/4 cup)

1 cup brown sugar

1/4 cup white sugar 

1 egg

2 egg yolks

2 teaspoon vanilla extract. 


Preheat your oven to 375. 

Whisk flour, salt, and soda together and set aside. 

Take one stick (1/2 cup) of the butter and brown it in a sauce pan. You want it to foam and I noticed with softened butter it took roughly 5 min. Then put this in a heatproof bowl and let it cool for about a min. Then take your half stick and put it in the browned butter to melt. My butter didn't melt honestly but when I whisked in the sugars it all broke up and was fine.

Whisk in the sugars.

Whisk in the egg and yolks

Whisk in the vanilla extract. 

Fold in dry ingredients 

Fold in chocolate chips. 

If the mixture slumps when you scoop it up then let it rest for 5 min.


This recipe makes 16 cookies. let them bake for 8-10 min or until the edges are a deep golden brown.
